- ½ handful fresh basil leaves (approximately 8 big leaves)
- 1 tablespoon extra virgin olive oil

Instructions
- Prepare Burrata: Carefully place the burrata cheese in a bowl to come to room temperature while you prepare the sauce. This allows the cheese to soften and become creamier when served.
- Make Tomato Sauce Base: In a large saucepan or pot, heat 1 tablespoon of extra virgin olive oil over medium heat. Add the two large garlic cloves and sauté until golden and fragrant, about 2-3 minutes, being careful not to burn the garlic.
- Add Tomatoes: Pour in the canned peeled tomatoes, breaking them up slightly with a wooden spoon. Add one cup of water (use the empty tomato can to measure) to capture any remaining sauce and enhance the flavor.
- Season and Simmer: Season the sauce well with salt and pepper. Tear up the fresh basil leaves and add them to the pot. Cover with a lid and let the sauce simmer on low to medium heat for 20 minutes to develop the flavors.
- Blend Sauce: Remove the lid and allow the sauce to cool slightly. Use an immersion blender or regular blender to blend the sauce until smooth. Pour the sauce back into the pot to keep warm.
- Cook Pasta: Bring a large pot of salted water to a boil. Cook the paccheri pasta until al dente, about 2 minutes less than the package instructions suggest. This usually means cooking the pasta for roughly 6-8 minutes.
- Combine Pasta and Sauce: Drain the pasta, reserving some pasta water. Add the hot pasta into the tomato sauce along with the freshly grated Parmigiano Reggiano cheese and a splash of pasta water. Stir gently to create a silky texture, adding more pasta water as needed to loosen the sauce.
- Finish and Serve: Remove the pan from heat. Transfer the pasta to serving bowls and place the room-temperature burrata cheese in the middle of the pasta. Carefully cut open the burrata to release its creamy center. Drizzle extra virgin olive oil on top, garnish with fresh basil leaves and a pinch of red pepper flakes. Serve immediately and enjoy!
