Instructions
- Preheat Oven and Prepare Molds: Preheat your oven to 400°F (200°C) and prepare two 24-muffin tins or silicone molds. This recipe yields 32 mini muffin-size chicken bites, but you can adjust the size if desired.
- Cook Chicken Mixture: In a pan over medium-high heat, add the ground chicken, diced onion, and minced garlic. Cook thoroughly until the chicken is fully cooked through.
- Incorporate Sauces and Seasoning: Once the chicken is cooked, add the ranch dip mix, black pepper, and Frank's RedHot Buffalo Sauce. Continue cooking for 2-3 minutes until the mixture thickens slightly. Remove from heat and transfer to a large mixing bowl.
- Mix Eggs, Cheese, and Breadcrumbs: Whisk the eggs together separately. Add the eggs, shredded mozzarella, and breadcrumbs to the warm chicken mixture. Stir well to combine all ingredients evenly.
