Description

Breakfast Bombs are a delicious and hearty morning treat featuring tender buttermilk biscuit dough filled with scrambled eggs, mild cheddar cheese, and savory precooked sausage links. Baked to golden perfection and brushed with rich salted butter, these bite-sized delights are perfect for a family breakfast or brunch.

Ingredients

Biscuit Dough

  • 1 can (8-count) Southern Homestyle Buttermilk Biscuits (not flaky)

Filling

  • 1½ cups (169.5 g) mild cheddar cheese, shredded, divided
  • 1 cup scrambled eggs, prepared to your liking (roughly 4-5 eggs depending on size), divided
  • 8 precooked sausage links, chopped (about 1 cup), divided

Butter Mixture and Garnish

  • ¼ cup (½ stick / 57 g) unsalted butter, melted
  • 1 teaspoon kosher salt
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat Oven and Prepare Pan: Preheat the oven to 375°F. Spray a 12-inch oven-safe skillet with nonstick cooking spray to prevent sticking and set aside.
  2. Prepare Scrambled Eggs: If not already done, cook scrambled eggs according to your preference, approximately equivalent to 4-5 eggs for one cup, and divide accordingly.
  3. Roll Out Biscuits: Remove each biscuit from the can and place them on a clean surface. Using a rolling pin, gently flatten each biscuit to about ⅛-inch thickness to create a larger surface area for filling.
  4. Assemble Filling: On each flattened biscuit, evenly spread shredded cheddar cheese, then add scrambled eggs, followed by chopped precooked sausage. Ensure you leave room around the biscuit edges for sealing.
  5. Form Breakfast Bombs: Using your fingers, carefully pull the sides of the biscuit up and pinch the edges tightly together to seal the filling inside. Place each sealed bomb, pinch side down, into the prepared skillet.
  6. Brush with Butter Mixture: In a small bowl, whisk melted unsalted butter with kosher salt. Brush half of this salted butter mixture generously over the tops of the bombs to add richness and promote browning.
  7. Bake: Place the skillet in the preheated oven and bake for 20-23 minutes or until the breakfast bombs turn golden brown and the biscuit dough is fully cooked.
  8. Final Butter Brush and Garnish: Immediately after baking, brush the remaining salted butter mixture over the bombs. Garnish with freshly chopped parsley for a touch of color and freshness.
  9. Serve: Serve hot as a comforting and hearty breakfast or brunch option, perfect for sharing with family or guests.

Notes

  • For extra flavor, you can substitute mild cheddar cheese with sharp cheddar or your favorite cheese blend.
  • Use gluten-free biscuit dough to make this recipe gluten-free if desired.
  • Ensure sausage links are fully cooked before chopping and filling to avoid undercooked meat inside.
  • Basting the bombs with salted butter before and after baking helps achieve a beautifully golden and flavorful crust.
  • These breakfast bombs can be prepared ahead and refrigerated; reheat in the oven for best texture.
