Ingredients

For the Bread and Oil

  • 2 thick slices bread (sourdough is ideal)
  • 1 tsp olive oil (or substitute with butter or mayo)

Cheese

  • 2 Tbsp goat cheese
  • 2 slices mellow white cheese (such as Havarti or mozzarella)

Fillings

  • ¼ cup chopped blueberries
  • ¼ cup fresh arugula
  • A few fresh basil leaves
  • Pinch of salt
  • Pinch of pepper
  • Optional: drizzle of balsamic vinegar or balsamic reduction


Instructions

  1. Prepare the Bread: Spread the olive oil evenly onto the outward-facing side of each slice of bread, which will help create a crispy, golden exterior when grilled.
  2. Apply Cheeses: On the inside of each slice of bread, spread the goat cheese thinly, then top each with a slice of mellow white cheese for a creamy and melty texture.
  3. Add Fillings: Pile the chopped blueberries, fresh arugula, and basil leaves onto one slice of bread over the cheese. Season lightly with salt and pepper. Optionally, add a drizzle of balsamic vinegar or reduction to amplify the flavor. Place the other slice of bread, cheese side down, over the fillings to complete the sandwich.
  4. Cook the Sandwich: Heat a pan or panini press on medium heat. Cook the sandwich for about 5 minutes, flipping once halfway through if using a pan, until the bread is golden brown and the cheeses have melted thoroughly. Serve immediately.
