- 2 tsp lemon zest
Instructions
- Preheat Oven: Preheat your oven to 350℉ (177℃). Line baking sheet pans with silicone baking mats or parchment paper to prevent sticking and ensure even baking.
- Mix Dry Ingredients: In a medium bowl, whisk together the cake flour, cornstarch, baking powder, and salt. Set this dry mixture aside for later incorporation.
- Prepare Lemon Sugar: In a small bowl, combine the granulated sugar with the lemon zest. Massage the mixture to release natural lemon oils to boost the lemon flavor in your cookies. Set aside.
- Cream Wet Ingredients: Using a stand mixer with a paddle attachment or a hand mixer in a large bowl, cream together the unsalted butter, vegetable oil, powdered sugar, and the lemon-infused granulated sugar until the mixture is smooth and creamy.
