Ingredients
Crepe Batter
- 1½ cups all-purpose flour
- Pinch of salt
- 2 cups milk
- 1 tablespoon fresh lemon juice
- 1 tablespoon pure vanilla extract
- 2 eggs (lightly beaten)
- Cooking spray
Blueberry Sauce
- 1 pint blueberries
- ½ cup granulated sugar
- ½ tablespoon lemon zest
- 1 tablespoon lemon juice
Honey Whipped Cream
- 1 cup cold heavy whipping cream
- 4 tablespoons honey
Instructions
- Whisk the dry ingredients: In a medium bowl, whisk together the all-purpose flour and a pinch of salt until evenly combined; set aside.
- Mix the wet ingredients: In a separate large mixing bowl, whisk together the milk, fresh lemon juice, pure vanilla extract, and lightly beaten eggs until smooth.
- Combine: Gradually add the wet milk mixture to the dry flour mixture, whisking continuously until the batter is completely smooth and free of lumps.
- Rest the batter: Let the batter rest for 15 minutes at room temperature. Alternatively, cover and refrigerate for up to 2 days to enhance flavor and texture.
- Cook down the blueberries: In a nonstick frying pan, combine blueberries, granulated sugar, lemon zest, and lemon juice. Cook over medium-low heat, stirring frequently for 10 to 12 minutes until the mixture becomes bubbly and the berries are tender. Remove from heat and set aside to cool slightly.
- Make the whipped cream: In a large mixing bowl, beat the cold heavy whipping cream on medium speed until it thickens. Add honey gradually and continue beating until soft peaks form. Adjust sweetness with more honey as desired. Cover and chill until ready to serve.
- Prep the pan: Lightly grease a large nonstick frying pan or crepe pan with cooking spray and heat over medium heat.
- Cook the crepes: Pour 1/3 cup of batter into the pan and swirl to evenly coat the bottom. Cook until the edges curl and the underside is golden brown, approximately 2 minutes. Flip and cook the other side for an additional 1 minute until lightly browned.
- Continue cooking: Remove crepe from the pan and repeat with remaining batter, spraying the pan with cooking spray between crepes to prevent sticking.
- Assemble and serve: Spread honey-whipped cream over each crepe, roll or fold into a triangle, top with blueberry sauce, and serve immediately for a delightful breakfast or brunch experience.
