Ingredients
Blueberry Reduction
- 1½ cups Blueberries, fresh or frozen (thawed)
Brownie Batter
- 10 tablespoons Unsalted butter, melted
- 1¼ cups Granulated sugar
- 2 large Eggs, room temperature
- ½ teaspoon Vanilla extract
- ½ teaspoon Salt
- 1 cup All-purpose flour, sifted
Vanilla Glaze
- 1 cup Powdered sugar, sifted
- 2 tablespoons Milk
- ⅛ teaspoon Vanilla extract
- Pinch of Salt
Instructions
- Make The Blueberry Reduction: Add the blueberries to a blender or food processor and blend until smooth. Pour the puree into a saucepan and simmer over medium-low heat, stirring frequently, until the mixture has reduced to ½ cup. Remove from heat and let it cool completely. Set aside.
- Preheat Oven and Prepare Pan: Preheat your oven to 325°F (163°C). Line an 8x8-inch glass baking dish with parchment paper, leaving enough overhang to easily lift the brownies out later. Set aside.
- Mix Wet Ingredients: In a medium bowl, stir together the melted unsalted butter and granulated sugar until well combined. Add in the eggs, vanilla extract, and salt, stirring until the mixture is smooth and uniformly colored.
- Incorporate Blueberry Reduction: Fold the cooled blueberry reduction into the wet ingredients gently to combine.
- Add Dry Ingredients: Gradually stir in the sifted all-purpose flour just until combined. Be careful not to overmix to maintain the chewy texture.
- Bake the Brownies: Spread the batter evenly into the prepared baking pan. Bake on the middle rack for 35-40 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs clinging to it.
- Cool the Brownies: Remove the brownies from the oven and let them cool completely in the pan.
- Prepare the Glaze: In a small bowl, stir together the powdered sugar, milk, vanilla extract, and a pinch of salt until smooth.
- Glaze the Brownies: Spread half of the glaze evenly over the cooled brownies. Let it set for a few minutes, then spread the remaining glaze on top. Allow the glaze to harden completely.
- Serve: Once the glaze has hardened, use the parchment paper overhang to lift the brownies from the pan, slice, and serve.
Notes
- Use fresh or thoroughly thawed frozen blueberries for the best flavor and consistency in the reduction.
- Be careful not to overmix the batter once the flour is added to avoid tough brownies.
- Allow the glaze to set completely before slicing to get clean cuts.
- Store brownies in an airtight container at room temperature for up to 3 days or refrigerate to keep longer.
- For a more intense blueberry flavor, you can add a teaspoon of blueberry extract to the batter.
