Description

This Blackberry Basil Ricotta Pizza is a unique and refreshing twist on traditional pizza, combining the sweet tang of blackberries with creamy ricotta and melted mozzarella and parmesan cheeses. Finished with fresh basil, this 25-minute recipe offers a delightful balance of fruity and savory flavors on a crispy pizza crust, perfect for a summer appetizer or light meal.

Ingredients

Pizza Base

  • 1 (14 to 16-inch) unbaked pizza crust
  • 1 tablespoon olive oil

Cheeses

  • 1 cup shredded mozzarella cheese
  • 1 cup shredded parmesan cheese
  • 1/2 cup ricotta cheese

Fruit and Herbs

  • 2 cups blackberries (about 1 pint)
  • 10 large fresh basil leaves (roughly chopped)

Instructions

  1. Preheat Oven and Pizza Stone: Heat the oven to 500℉ (260℃) and place a 14- to 16-inch pizza stone inside to preheat, ensuring a crispy base for your pizza.
  2. Prepare Pizza Crust: Brush the unbaked pizza crust evenly with 1 tablespoon of olive oil to add flavor and help toppings stick.
  3. Mash Half the Blackberries: In a small bowl, gently mash half of the 2 cups of blackberries to release their juices and spreadability.
  4. Spread Mashed Blackberries: Evenly spread the mashed blackberries over the oiled pizza crust to create the fruity base layer.
  5. Add Mozzarella and Parmesan: Sprinkle 1 cup shredded mozzarella cheese and 1 cup shredded parmesan cheese evenly over the mashed blackberries.
  6. Add Remaining Blackberries and Ricotta: Halve the remaining blackberries and scatter them on top of the cheese layer. Then add 1/2 cup ricotta cheese in small heaping teaspoon-sized spoonfuls across the pizza.
  7. Bake the Pizza: Transfer the pizza onto the preheated pizza stone and bake for 10 to 15 minutes, or until the cheese is melted and begins to brown.
  8. Add Fresh Basil: While the pizza bakes, roughly chop or chiffonade 10 large fresh basil leaves. Add the basil to the pizza during the last 1 to 2 minutes of baking to retain its fresh flavor.
  9. Serve: Remove the pizza from the oven and let it rest for 1 to 2 minutes. Slice into 8 wedges and serve hot, enjoying the balance of sweet and savory flavors.

Notes

  • Using a pizza stone helps achieve a crisp crust similar to traditional pizzeria style.
  • Fresh basil added at the end prevents it from wilting and keeps its bright flavor.
  • You can substitute blackberries with other berries such as blueberries or raspberries if preferred.
  • For a gluten-free option, use a gluten-free pizza crust.
  • Adjust baking time depending on your oven; keep an eye on cheese browning.
