Ingredients
Vegetables
- 1 large head cauliflower (chopped into florets, about 10 cups)
Seasonings & Oil
- 3 tablespoons olive oil
- 2 teaspoons paprika
- 3/4 teaspoon salt
- 1/2 teaspoon ground black pepper
- 5 large cloves garlic (minced)
Optional Garnishes
- 1/4 cup parmesan cheese (dairy-free Violife optional)
- 2 tablespoons fresh lemon juice
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat Oven: Set your oven to 425°F (220°C) to ensure it's fully heated by the time your cauliflower is ready for roasting.
- Prepare Cauliflower: Place the cauliflower florets on a large rimmed baking sheet. Drizzle with the olive oil and toss them thoroughly so every piece is evenly coated.
- Season Cauliflower: Sprinkle paprika, salt, and pepper over the oiled cauliflower. Toss again to distribute the seasonings evenly throughout the florets.
- First Roast: Arrange the cauliflower in a single layer on the baking sheet. Roast in the preheated oven for 20 to 25 minutes until the cauliflower turns golden and becomes tender.
- Add Garlic and Cheese: Remove the baking sheet briefly from the oven and sprinkle minced garlic and parmesan cheese (if using) over the cauliflower. Return to the oven and roast for an additional 5 minutes to develop flavor and finish cooking.
- Finish and Serve: Take the cauliflower out of the oven and immediately drizzle with fresh lemon juice. Garnish with chopped fresh parsley and serve the dish hot for the best taste.
Notes
- If dairy is a concern, use a dairy-free parmesan alternative like Violife or omit cheese entirely.
- For added heat, sprinkle in some cayenne pepper or chili flakes before roasting.
- This recipe can be doubled on two baking sheets, but roast sheets separately for even cooking.
- Leftovers keep well refrigerated for up to 3 days and can be reheated in the oven to restore crispness.
- Use fresh garlic rather than pre-minced jars for the best flavor and texture.
