Description
This Best Pavlova Recipe yields a delicate and crisp meringue dessert with a soft, marshmallow-like center. Topped with freshly whipped cream and fresh berries, it makes for an elegant and light treat perfect for special occasions and gatherings.
Ingredients
Meringue
- 6 egg whites (at room temperature)
- 1 1/2 cups granulated/caster sugar
- Pinch salt
- 3 tsp cornflour/cornstarch
- 1 tsp white vinegar
- 1 tsp vanilla essence
Topping
- 1 cup cream (for whipping)
- Strawberries or other fresh berries (for serving)
Instructions
- Preheat oven: Preheat your oven to 300°F (150°C) to prepare for baking the meringue.
- Clean equipment: Soak a paper towel in a little white vinegar and use it to wipe your bowl and whisk attachment. This removes any grease and ensures your meringue whips up properly. Discard the vinegar-soaked towel.
- Whisk egg whites: Whisk the egg whites with a pinch of salt until stiff peaks form, which means the mixture holds its shape when the whisk is lifted.
- Add sugar gradually: Slowly add the sugar in 1/4 cup increments, whisking about 1 minute after each addition until dissolved. Test by rubbing a bit between your fingers; it should feel smooth, not grainy.
- Whisk for thickness: After all sugar is added, whisk on high speed for another 3 minutes until the mixture is thick and glossy.
- Mix dry ingredients: In a small bowl, combine cornflour/cornstarch, white vinegar, and vanilla essence.
- Combine meringue mixture: Gently whisk in the dry ingredients mixture until just combined, maintaining the airy texture.
- Prepare baking tray: Line a 12-inch round pizza tray with baking parchment cut into a circle to prevent sticking.
- Shape pavlova: Scoop out the meringue onto the tray, shaping it into an 8-9 inch diameter circle. Use a spatula to create neat ridges from bottom to top for texture.
- Bake pavlova: Reduce oven temperature to 250°F (120°C). Place the pavlova in the center of the oven and bake for 1 to 1 hour 15 minutes. The pavlova should be lightly browned and dry to touch.
- Cool in oven: Turn off the oven and leave the pavlova inside with the door closed for 3 hours to cool slowly, which helps maintain its crisp exterior.
- Prepare topping & serve: Whip the cream until soft peaks form. Spoon the whipped cream into the center of the cooled pavlova and garnish generously with fresh strawberries or other berries. Serve immediately for best texture.
Notes
- Ensure all equipment is grease-free to achieve the perfect stiff peaks for meringue.
- Use room temperature egg whites; they whip better and achieve more volume.
- Do not open the oven door during baking to avoid cracks but briefly check the pavlova through the oven light.
- Slow cooling in the oven helps prevent cracks and keeps the pavlova crisp outside while soft inside.
- Fresh berries can be substituted or combined with passionfruit or kiwi for added tropical flavor.
