Ingredients

For the Chocolate Cookies

  • 3/4 cup unsalted butter (170g or 12 tbsp), softened at room temperature
  • 1 cup granulated sugar (200g)
  • 1 large egg
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour (195g)
  • 1/2 cup Dutch processed cocoa powder (50g)
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt

For the Chocolate Ganache

  • 150g semi-sweet chocolate, chopped
  • 75g heavy cream (about 1/3 cup)

For Decoration (Optional)

  • Crushed freeze-dried strawberries


Instructions

  1. Make the chocolate cookie dough: Whisk softened butter and sugar for 2-3 minutes until light and fluffy, scraping the bowl twice. Add egg, egg yolk, and vanilla; whisk until combined, scraping again.
  2. Combine dry ingredients: Sift together flour, cocoa powder, baking powder, baking soda, and salt in a separate bowl. Add to wet ingredients in 2-3 batches, folding gently until just combined. The dough should be soft but workable.
  3. Prepare baking sheets: Line 1-2 large baking sheets with parchment paper.
  4. Shape dough: Form cookie dough into 25g balls (~1 inch diameter), about 26 balls. Use minimal pressure to prevent greasiness, smoothing cracks gently.
  5. Create thumbprints: Place balls on sheets, 2 inches apart. Using the back of a 1/2 teaspoon or thumb, press a round indentation in each ball to form the thumbprint and flatten slightly.
  6. Chill dough balls: Refrigerate for 30 minutes or freeze for 15 minutes to set the shape. Meanwhile, prepare the ganache.
  7. Preheat oven: In the last 15 minutes of chilling, preheat oven to 375°F (190°C), conventional bake (no fan).
  8. Bake the cookies: Bake chilled cookie balls for 9-11 minutes, depending on desired softness (9 minutes for softer, 11 for firmer). Test bake one cookie first for best results.
  9. Restore thumbprints: Immediately after baking while cookies are hot, gently press the centers again with a larger spoon measure (about 1 tablespoon) to re-create the thumbprint indentation.
  10. Cool cookies: Let cookies cool at room temperature for 10 minutes.
  11. Make chocolate ganache: Place chopped chocolate in a bowl. Heat heavy cream until just simmering and pour over chocolate to cover. Cover and let stand 5 minutes.
  12. Stir ganache: Stir gently until smooth and shiny. Allow to cool and thicken at room temperature while cookies bake and cool.
  13. Fill cookies: Once cookies and ganache are cool, spoon ganache into each thumbprint generously.
  14. Set ganache: Let the filled cookies rest for about 30 minutes to allow the ganache to set properly.
