  • Zest and juice of 1 lemon
  • ¼ cup water
  • Pinch of salt

Whipped Cream Topping

  • 2 cups heavy whipping cream
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract
  • Additional berries for decoration/serving


Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking pan thoroughly with nonstick baking spray to ensure easy removal of the cake.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt until evenly combined. Set aside.
  3. Cream Butter and Sugar: Using a stand mixer fitted with the paddle attachment or a hand-held mixer, beat the softened butter and granulated sugar on high speed for about 3 minutes until the mixture is light and creamy.
  4. Add Eggs and Vanilla: Add eggs one at a time to the creamed mixture, beating well after each addition. Then mix in the vanilla extract and continue beating for 1-2 minutes until fluffy. Scrape down the sides of the bowl as needed to ensure even mixing.
