Ingredients

  • 1 bunch beet greens, stems removed, washed and dried
  • 1 tablespoon olive oil

Instructions

  1. Prepare the Beet Tzatziki: In a medium mixing bowl, combine the plain Greek yogurt, chopped fresh dill, grated or minced garlic, lemon juice, salt, and pepper. Using the large holes of a grater, grate the roasted beets directly into the bowl. Gently fold the grated beets into the yogurt mixture until well combined and evenly colored.
  2. Make the Beet Green Chips: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Spread the beet greens out in a single layer on a baking sheet. Drizzle them with olive oil and sprinkle salt to taste. Bake for 7-10 minutes, then carefully turn the greens over to the other side and bake for an additional 7-10 minutes, or until the greens are crispy but not burnt.
