Ingredients

Vegetables

  • 20 - 24 oz fresh broccoli florets (approximately two 12 oz or two 10 oz bags)
  • 1 lb fresh Brussels sprouts
  • 1 bell pepper (any color), sliced into strips
  • 3 tbsp extra virgin olive oil
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic powder

Beef

  • 1 lb lean ground beef (93/7 blend, or substitute ground turkey)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp chili powder

Comeback Sauce

  • 1/2 cup mayonnaise
  • 1 tbsp ketchup
  • 1 tsp lemon juice
  • 1/2 tsp Tabasco sauce
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp ground mustard
  • 1/2 tsp salt


Instructions

  1. Preheat the oven. Set your oven to 425°F to prepare for roasting the vegetables evenly.
  2. Prepare the broccoli. Cut any large broccoli florets into halves or thirds to ensure even cooking, then spread them in a single layer on a baking sheet.
  3. Prepare the Brussels sprouts. Trim the bottoms and peel away the first layer of leaves to remove any dirt or brown spots, then place the sprouts beside the broccoli on the baking sheet in a single layer.
  4. Slice and add bell pepper. Cut the bell pepper into strips and arrange them in a single layer alongside the other vegetables on the baking sheet.
  5. Season and roast vegetables. Drizzle the olive oil over all the vegetables, then sprinkle with salt, pepper, and garlic powder. Roast in the preheated oven for 20 to 25 minutes until tender and slightly caramelized.
  6. Cook the ground beef. While vegetables roast, add ground beef to a skillet over medium-high heat. Use a spatula to crumble the meat and cook, stirring occasionally, until browned. Drain excess grease if needed. Season with salt, pepper, and chili powder, then remove from heat.
  7. Make the comeback sauce. In a small bowl, combine mayonnaise, ketchup, lemon juice, Tabasco, paprika, garlic powder, ground mustard, and salt. Stir until fully blended and smooth.
  8. Assemble the bowls. Divide the roasted vegetables among four bowls. Top each with the cooked ground beef and a generous dollop of comeback sauce. Serve immediately and enjoy.
