Ingredients
Flatbread Dough
- 1 1/4 cup flour (plus more for rolling)
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup Greek yogurt
Toppings
- 1/2 cup mozzarella cheese
- 1 1/4 cup strawberries, sliced
- Salt and pepper, to taste
- 1/2 cup feta cheese, crumbled
- 8 basil leaves, julienned
- 1/4 cup balsamic glaze
Instructions
- Preheat the oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prepare for baking the flatbread.
- Prepare the flatbread dough: In a bowl, mix together all the dry ingredients (flour, baking powder, baking soda, salt). Add the Greek yogurt and stir with a wooden spoon until combined; the dough will be shaggy and sticky. Transfer the dough to a well-floured surface, sprinkle a little more flour over it, and fold the dough over itself several times to build structure. Then, form the dough into a ball.
- Shape the flatbread: Place the dough ball on the lined baking sheet and press down with your hands, shaping it into a roughly rectangular flatbread about 1/4 inch thick, making sure it's evenly spread out.
- Add the cheeses and strawberries: Sprinkle the mozzarella evenly over the flatbread, leaving a small border around the edges. Season lightly with salt and pepper. Then scatter the sliced strawberries and crumbled feta cheese evenly on top of the mozzarella layer.
- Bake the flatbread: Place the baking sheet in the preheated oven and bake for 15 to 20 minutes, or until the crust turns a golden brown and the cheese melts nicely.
- Finish and serve: Remove the flatbread from the oven and immediately sprinkle the julienned basil leaves on top. Drizzle the balsamic glaze over the flatbread for a delicious tangy finish. Slice and serve warm.
Notes
- Ensure to use Greek yogurt for the dough as it gives the right consistency and tang.
- If the dough is too sticky to handle, dust with additional flour sparingly.
- For a sweeter balsamic glaze, you can warm it slightly before drizzling.
- Use fresh, ripe strawberries for the best flavor contrast with the feta and balsamic.
- Serve immediately for the best texture, but leftovers can be reheated briefly in the oven.
