Ingredients
Sausage

Instructions
- Preheat Oven. Preheat your oven to 400 degrees Fahrenheit and spray a dark roasting pan or sheet pan with cooking spray to prevent sticking and promote even roasting.
- Prepare Peppers. Rinse and pat the bell peppers dry. Cut a circle around the stems to remove them, then cut each pepper in half, remove seeds and membranes, halve again, and finally slice into strips about ½ inch wide.
- Prepare Onions. Cut off the ends of the onion, peel off the skin, then slice the onion halves vertically into strips.
- Assemble in Pan. Arrange the sausage in a single layer in the prepared pan. Layer the sliced peppers next, followed by the sliced onions.
- Season. Drizzle olive oil evenly over the sausage and vegetables. Sprinkle salt, black pepper, and garlic powder across each layer to ensure even seasoning.
- Bake. Bake uncovered for 45-50 minutes at 400°F, turning the sausage and stirring the vegetables after 30 minutes to promote even browning. The sausage should be browned on the bottom before turning. If using a 375°F oven, bake for 90 minutes total, stirring after about 50 minutes.
- Check for Doneness. Monitor the dish throughout baking and stir occasionally. Cut a piece of sausage in half to confirm it is fully cooked with no pink inside.
- Serve and Store. Serve with fresh Italian bread for dipping in the oil or use the mixture in hoagie sandwiches. Store leftovers in a sealed container in the refrigerator for up to four days.
