- 4 large russet potatoes (about 2 pounds), scrubbed clean and dried

- 3 tablespoons olive oil, divided
- 1½ teaspoon coarse kosher salt
- 1 teaspoon ground black pepper
- 2 teaspoons dried Italian herbs
- 1 teaspoon garlic powder
- 3 garlic cloves, minced
- ¼ cup parmesan cheese
Instructions
- Preheat the Oven: Preheat your oven to 425ºF (220ºC) and line a rimmed baking sheet with parchment paper to prevent sticking and make cleanup easier.
- Cut the Potatoes: Cut the cleaned russet potatoes into 8 roughly even wedges each to ensure even cooking and crispiness.
- Season the Potatoes: On the prepared sheet pan, toss the potato wedges with 2 tablespoons of olive oil, coarse kosher salt, black pepper, dried Italian herbs, and garlic powder. Make sure each wedge is well coated. Arrange the wedges on the pan with the flat sides down for optimal crispiness.
- Bake the Potatoes: Bake the wedges in the preheated oven for 40 minutes. Flip the wedges halfway through baking to ensure even browning on all sides.
- Add Garlic & Parmesan: After 40 minutes, remove the pan from the oven and add the minced garlic, parmesan cheese, and the remaining 1 tablespoon of olive oil. Gently mix the garlic and parmesan in with the wedges on the pan, being careful not to break the wedges.
- Finish Baking: Return the pan to the oven and bake for another 5-10 minutes until the potato wedges are crispy, the cheese is melted and lightly golden, and the garlic is fragrant and golden.

- For extra crispiness, soak the potato wedges in cold water for 30 minutes before baking, then pat dry thoroughly.
