Ingredients
Vegetables
- 2 cups cherry or grape tomatoes
- 1 red bell pepper, diced
- 1/2 small red onion, diced
- 3 cloves minced garlic
- 1 cup chopped baby spinach
Dairy
- 8 ounces feta cheese
- 4 large eggs
Oils & Spices
- 4 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon sea salt
- 1/2 teaspoon dried thyme
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon red pepper flakes
Optional Toppings
- Chopped fresh basil or fresh chives
Instructions
- Preheat Oven: Set your oven to 400°F to prepare for baking the ingredients evenly.
- Prepare Ingredients in Dishes: If using individual ramekins, distribute the tomatoes, bell pepper, red onion, garlic, and feta cheese among 4 oven-safe dishes. Drizzle 1 tablespoon of olive oil over each dish. If using one large baking dish, combine all the vegetables in it and place the feta cheese in the center. Drizzle olive oil over everything.
- Mix Spices: In a small bowl, stir together dried oregano, sea salt, dried thyme, black pepper, and red pepper flakes to create a flavorful spice blend.
- Season the Ingredients: Sprinkle the prepared spice mixture evenly over the feta and vegetables in each of the individual dishes or across the large baking dish.
- Bake the Vegetables and Feta: Place ramekins on a baking sheet or place the large dish directly in the oven. Bake for 25 minutes until the vegetables are softened and the feta starts to melt.
- Combine Melted Feta and Veggies: Remove the dishes from the oven, gently stir the contents so the feta is evenly distributed and mixed with the roasted vegetables.
- Add Spinach: Stir in the chopped baby spinach until it wilts into the warm mixture.
- Create Wells and Add Eggs: Make a small well in the center of each ramekin or four wells in the large baking dish, then crack one egg into each well.
- Bake Eggs: Return the dishes to the oven and bake for an additional 10 minutes, or until eggs are cooked to your desired doneness.
- Add Fresh Herbs: Sprinkle optional chopped fresh basil or chives over the top for freshness and an herbal aroma.
- Serve: Serve the baked feta eggs warm with crusty baguette, toast, or pita on the side for dipping into the creamy, flavorful mixture.
Notes
- Use oven-safe ramekins or a single baking dish for easy cooking and serving.
- Adjust baking time slightly depending on how runny or firm you prefer your eggs.
- Fresh herbs like basil or chives add a bright finishing touch but are optional.
- Serve immediately to enjoy the eggs at their best texture and flavor.
- Leftovers can be refrigerated and gently reheated but are best fresh.
