Ingredients
Meat and Seasoning
- ½ pound bacon
- 1 pound ground beef
- 2 tablespoons burger seasoning (or to taste)
Vegetables
- 1 medium onion, diced
- ¾ cup carrots, small diced or shredded
- 2 ribs celery, diced
- 4 cups gold potatoes, peeled and ½-inch diced
Broth and Dairy
- 3 cups low-sodium chicken broth (or water)
- 3 tablespoons unsalted butter
- ¼ cup all-purpose flour
- 1 ½ cups whole milk (or half and half)
- 16 ounces Velveeta, cubed
- ¼ cup sour cream (optional)
Instructions
- Cook the Bacon: In a large soup pan or Dutch oven, cook the bacon until it reaches your desired crispness. Remove the bacon and drain all but 2-3 tablespoons of the drippings in the pan.
- Brown the Ground Beef: Add the ground beef and 1 tablespoon of burger seasoning to the pan. Cook until no longer pink. Use a slotted spoon to remove the beef and drain all but 2 tablespoons of excess grease.
- Sauté the Vegetables: Add diced onion, carrots, celery, and the remaining 1 tablespoon of burger seasoning to the pan. Cook for 3-5 minutes until vegetables soften slightly.
- Cook the Potatoes: Add diced potatoes and pour in the chicken broth. Bring to a boil, then reduce heat to a low boil. Cook uncovered for 15-20 minutes until potatoes are tender but not mushy.
- Make the Roux: In a small pan, melt butter and whisk in flour. Cook for 2-3 minutes until smooth. Gradually whisk in milk and cook over low-medium heat until the mixture thickens. Remove from heat and set aside.
- Combine Roux and Cheese: Stir the roux into the soup and continue stirring until it thickens slightly. Add Velveeta cubes gradually, stirring to melt completely before adding more cheese.
- Add Meat and Sour Cream: Return the cooked ground beef and crumbled bacon to the soup, stirring to combine. Mix in sour cream if using.
- Serve: Top with your favorite garnishes like extra cheese, crumbled bacon, chopped green onion, chives, or parsley. Serve warm and enjoy.
