Ingredients

- 2 medium ripe but still slightly firm peaches, diced
- 1 ripe but still slightly firm large avocado, diced
- 1 large ear corn, kernels cut off (about ¾ cup corn)
- 3 tablespoons finely diced red onion
- 1 jalapeño, seeded and diced
- 2 tablespoons finely diced cilantro
- 1 lime, juiced

- Salt & freshly ground black pepper, to taste
Instructions
- Prepare the Ingredients: Dice the peaches and avocado into bite-sized pieces, carefully cut the kernels off the corn ear, finely dice the red onion, seed and dice the jalapeño to your preferred heat level, and finely chop the cilantro.
- Mix the Salsa: In a medium bowl, gently combine the diced peaches, avocado, corn kernels, red onion, jalapeño, and cilantro. Pour in the lime juice and sprinkle with salt and freshly ground black pepper to taste.
- Serve: Garnish with extra cilantro for freshness. Serve immediately with multigrain tortilla chips or use as a topping for salmon, fish tacos, grilled chicken, or shrimp.
- Storage: Store any leftover salsa in an airtight container in the refrigerator for up to 3 days. The lime juice helps preserve the avocado’s bright green color.
