Description

A refreshing and creamy Apple Smoothie made with honey crisp apples, almond milk, coconut yogurt, and almond butter, blended to a smooth perfection. This recipe is perfect for a quick and nutritious breakfast or snack, with optional collagen for an extra protein boost.

Ingredients

Fruits

  • 1 1/2 medium honey crisp apple (or 1 large, peel on and chopped)
  • 1 large Medjool date (or two small, pitted)

Dairy Alternatives & Additives

  • 3/4 cup almond milk (substitute coconut milk for AIP)
  • 1/2 cup coconut yogurt
  • 2 tbsp almond butter (substitute tigernut butter for AIP)
  • 1/2 tsp cinnamon
  • 1/3 cup crushed ice
  • Optional - 2 scoops collagen

Instructions

  1. Combine Ingredients: Add the honey crisp apple, Medjool date, almond milk, coconut yogurt, almond butter, cinnamon, and crushed ice to a blender. Optionally add collagen if desired.
  2. Blend Smooth: Blend all the ingredients on high speed until completely smooth and creamy. If the smoothie is thicker than you prefer, gradually add an extra 1/4 cup of almond milk to reach your desired consistency.
  3. Serve: Pour the smoothie into chilled glasses. Garnish with a sprinkle of cinnamon on top for an aromatic finish. Enjoy immediately for the best flavor and texture.

Notes

  • You can substitute coconut milk and tigernut butter for almond milk and almond butter to make the recipe compliant with the Autoimmune Protocol (AIP).
  • The smoothie can be made ahead and refrigerated, but for best taste and texture, consume immediately after blending.
  • Adding collagen boosts protein content without altering flavor significantly.
  • Adjust the number of dates for sweetness preference.
  • Use crushed ice for a colder, thicker smoothie or omit for a softer texture.
