Apple Cider Cake

  • 1 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 10 tbsp (140 g) unsalted butter, softened
  • 1 cup (200 g) granulated white sugar
  • 1/2 cup (110 g) light brown sugar, packed
  • 3 eggs, at room temperature
  • 1 tbsp vanilla extract
  • 1/2 cup (120 ml) buttermilk, at room temperature
  • 1/2 cup (122 g) sour cream, at room temperature
  • 1/2 cup (120 ml) apple cider reduction (from above), at room temperature
  • 1/3 cup (95 g) unsweetened apple butter, at room temperature

Apple Cider Caramel Sauce

  • 1/2 cup (120 ml) apple cider reduction (from above), at room temperature
  • 3/4 cup (165 g) light brown sugar, packed
  • 9 tbsp (126 g) unsalted butter
  • 1 cup (240 ml) heavy cream
  • 1 tsp vanilla extract
  • 1/8 tsp salt

Cream Cheese Frosting

  • 1 cup (224 g) unsalted butter, softened
  • 8 oz (226 g) cream cheese, cold
  • 2 cups (260 g) powdered sugar


Instructions

  1. Make the Apple Cider Reduction: Pour 6 cups of apple cider into a large saucepan and bring to a simmer over medium-low heat. Let it simmer for 40-50 minutes until reduced to approximately 1 cup, checking around 40 minutes. Allow the reduction to cool completely; half will be used in the cake batter and half in the caramel sauce.
  2. Prepare the Cake Pan and Oven: Preheat the oven to 350°F (175°C). Grease a 9x9 inch metal baking pan and line it with parchment paper for easy cake removal.
  3. Mix Dry Ingredients: In a medium bowl, whisk together the all-purpose flour, cinnamon, nutmeg, allspice, baking powder, baking soda, and salt. Set aside.
  4. Cream Butter and Sugars: In a large bowl (or stand mixer with paddle attachment), beat the softened butter, granulated sugar, and light brown sugar on high speed for 2 minutes until light and fluffy.
  5. Add Eggs and Vanilla: Add the eggs one at a time along with the vanilla extract. Mix on medium speed until pale and smooth, about 1 minute.
  6. Incorporate Wet Ingredients: Mix in the buttermilk, sour cream, half of the cooled apple cider reduction (1/2 cup), and the unsweetened apple butter on medium speed until combined. The batter may look curdled at this point.
  7. Add Dry Ingredients: Gradually add the dry flour mixture to the wet ingredients, mixing on low speed just until fully incorporated and smooth. Scrape the bowl sides as necessary to ensure even mixing.
  8. Bake the Cake: Pour the batter into the prepared pan and bake for 48-52 minutes. Test doneness by inserting a toothpick in the center— it should come out clean.
  9. Cool the Cake: Remove the cake from the oven and cool completely in the pan on a wire rack.
  10. Make the Apple Cider Caramel Sauce: While the cake bakes, add the remaining apple cider reduction, butter, and brown sugar to a medium saucepan. Bring to a simmer over medium heat and cook for 5 minutes, stirring occasionally.
  11. Add Cream and Finish Caramel: Reduce heat to medium-low, stir in the heavy cream, and simmer for another 3-4 minutes. Remove from heat, then stir in vanilla extract and salt. Let cool to room temperature.
  12. Prepare Cream Cheese Frosting: In a large bowl, whip the softened butter on high speed until pale and fluffy. Add the cold cream cheese and mix on medium speed until well combined and fluffy.
  13. Add Powdered Sugar: Sift in the powdered sugar gradually, mixing on low speed until combined. Then whip on high speed for 1 minute until light and fluffy.
