  • 1 tbsp Dijon Mustard
  • 1 tbsp Mayo
  • 2 tsp Everything But The Bagel seasoning
  • 1 tsp honey
  • 3 leaves Fresh Sage, chopped
  • Pinch of Salt

Main Sandwich Ingredients

  • 6-8 slices Bacon
  • 1 Fuji Apple, sliced thinly
  • 1/2 cup Sharp Cheddar Cheese, shredded
  • 1/2 cup Mozzarella Cheese, shredded
  • 3-4 sprigs Fresh Thyme (leaves separated)
  • 4 tbsp Salted Butter
  • 4 slices Sourdough Bread


Instructions

  1. Cook Bacon: Preheat the oven to 375°F. Arrange bacon slices evenly on a baking sheet and cook for 15-20 minutes until golden brown and crisp. Once done, increase the oven temperature to 400°F.
  2. Prepare Spread: In a small bowl, combine Dijon mustard, mayo, Everything But The Bagel seasoning, honey, chopped sage leaves, and a pinch of salt. Stir well to create a flavorful spread.
  3. Assemble Sandwich: Spread about 1 tablespoon of the Dijon mixture onto two slices of sourdough bread. Sprinkle shredded cheddar and mozzarella cheese on top. Layer 3-4 slices of cooked bacon and 5-6 thin apple slices over the cheese. Sprinkle 1-2 fresh thyme leaves on top, then place the other bread slices over the fillings to form sandwiches. Place each sandwich on an oven-safe skillet or frying pan. Add 1 tablespoon of butter on top of each sandwich and 1 tablespoon of butter in the pan.
  4. Bake Sandwiches: Place the skillet with sandwiches in the oven and bake for 8-10 minutes, until the cheese is visibly melted and sandwiches are warmed through.
  5. Pan-Sear Sandwiches: Carefully remove the skillet from the oven and transfer it to the stovetop over medium-high heat. Add additional butter as needed and cook each side of the sandwiches for 2-3 minutes until golden brown and crispy.
