Instructions

  1. Prep. Preheat oven to 350°F (177°C). Line a large baking sheet with parchment paper to prevent sticking and ensure even baking.
  2. Grind pistachios. Using a food processor or spice grinder, grind the raw pistachios into a fine powder, ensuring there are no visible nut pieces left for a smooth cookie texture.
  3. Mix dry ingredients. In a medium bowl, combine the ground pistachios, almond flour, ground cardamom, and salt. Stir well until all dry ingredients are evenly distributed.
  4. Finish cookie dough. In a separate bowl, beat the unsalted butter and 1/4 cup plus 2 tablespoons of the confectioners’ sugar with an electric mixer on medium speed until the mixture becomes creamy and fluffy, about 1 to 2 minutes. Gradually add the dry nut mixture, starting on low speed then increasing to high, and mix until fully incorporated. Remove the beaters and gently knead the dough a few times by hand until it forms a smooth ball, noting it may initially appear crumbly due to the nut flours and butter.
  5. Make balls. Scoop scant tablespoon-sized portions of dough and roll them into smooth balls. Arrange these evenly spaced on the prepared baking sheet.
  6. Bake. Place the tray in the preheated oven and bake for 18 to 23 minutes or until the cookies have turned a deep golden color. Remove from oven and transfer the cookies to a wire rack, letting them cool until just warm.
  7. Coat in sugar. Place the remaining 1/4 cup of powdered sugar in a medium bowl. While the cookies are still warm, roll them gently in the sugar until coated evenly, then return to the wire rack to cool completely. For a more pronounced powdered sugar coating, reroll the cooled cookies in sugar as needed.
