Ingredients
Chicken and Seasoning
- 4 boneless skinless chicken breasts (5-6 oz each)
- 1 tablespoon olive oil
- ¼ teaspoon paprika
- ¼ teaspoon garlic powder
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Filling
- 4 ounces cream cheese (softened)
- 2 tablespoons parmesan cheese
- 1 clove garlic (minced)
- 1 cup fresh spinach (finely chopped)
- 3 tablespoons chopped sundried tomatoes
- ½ teaspoon Italian seasoning
Instructions
- Preheat Air Fryer: Preheat your air fryer to 360°F (182°C) to ensure it is at the right temperature for even cooking.
- Prepare Filling: In a bowl, combine the softened cream cheese, parmesan cheese, minced garlic, finely chopped spinach, chopped sundried tomatoes, and Italian seasoning. Mix well until all ingredients are fully incorporated.
- Prepare Chicken Breasts: Cut each chicken breast about ¾ of the way through lengthwise, creating a pocket or a book-like fold. Be careful not to cut all the way through.
- Stuff Chicken: Divide the filling mixture evenly and stuff each chicken breast with approximately ¼ of the filling. Fold the chicken closed over the filling and secure each one with a toothpick to hold the stuffing inside during cooking.
- Season and Oil Chicken: Rub the outside of each stuffed chicken breast with olive oil, then season with paprika, garlic powder, salt, and pepper evenly over all sides.
- Air Fry Chicken: Place the stuffed chicken breasts in a single layer in the air fryer basket. Cook for 18 to 22 minutes, flipping halfway if desired, until the internal temperature reaches 165°F (74°C) on an instant-read thermometer and the chicken is cooked through and juices run clear.
Notes
- Ensure chicken is cooked to a safe internal temperature of 165°F to prevent any foodborne illness.
- If your chicken breasts are larger or smaller, adjust cooking times accordingly.
- Use toothpicks to secure the chicken to prevent the filling from leaking out while cooking.
- Allow chicken to rest for 3-5 minutes before slicing to retain juices.
- Feel free to swap out spinach with kale or arugula for different greens.
- Sundried tomatoes can be packed in oil or dry; if dry, rehydrate them in warm water for a few minutes for softer texture.
