  • 1 15 ounce can wild caught salmon (skinless and boneless)
  • 2 eggs
  • 2 tablespoons plain Greek yogurt (dairy free or regular)
  • 1/2 cup gluten free breadcrumbs (substitute regular if not GF)
  • Juice from 1/2 lemon
  • 2 teaspoons minced garlic
  • 2 tablespoons fresh chopped parsley
  • 2 tablespoons fresh chopped chives
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon onion powder
  • Olive oil spray for cooking


Instructions

  1. Drain Salmon: Drain off the liquid from the can of salmon and add the salmon to a bowl.
  2. Mash Salmon: Use a fork to roughly mash the salmon into smaller pieces.
  3. Add Remaining Ingredients: Add the eggs, plain Greek yogurt, gluten free breadcrumbs, lemon juice, minced garlic, fresh parsley, chives, salt, black pepper, paprika, and onion powder to the mashed salmon.
  4. Mix Ingredients: Mix all ingredients together thoroughly with a fork until well combined.
  5. Form Patties: Using a 1/3 cup measuring cup, scoop the mixture and then shape it into balls with your hands. Flatten each ball slightly into a disc-shaped patty.
  6. Preheat Air Fryer: Preheat your air fryer to 390°F (approximately 200°C).
  7. Prepare Patties for Air Frying: Place the patties into the air fryer basket and lightly spray the tops of each patty with olive oil spray.
  8. Air Fry Patties: Cook the patties in the preheated air fryer for 7 to 8 minutes, or until they are lightly golden brown and crispy. Since the salmon is already cooked, this step is to crisp the outside.
  9. Serve: Remove the salmon patties from the air fryer and serve hot, ideally with lemon tahini dressing or your preferred sauce.
