- 6 green onions, roughly chopped
- 1 large shallot or small red onion
- 4 cloves garlic, peeled and smashed
- 2 scotch bonnet peppers, stem removed
- 1 ½ inch piece fresh ginger, peeled and roughly chopped
- 2 limes, juice and zest
- 2 tbsp vegetable oil
- 2 tbsp dark soy sauce (optional)
- 2 tbsp brown sugar
- 1 tbsp fresh thyme leaves
- 1 tbsp ground allspice
- ½ tbsp salt
- 1 tsp ground black pepper

Instructions
- Make the Marinade: Place all the marinade ingredients in a food processor or mini chopper and blend to a coarse paste. Reserve a couple of tablespoons of the marinade in a small jar for later use.
- Marinate the Chicken: Trim any excess skin from the chicken thighs. Place them in a Pyrex or suitable container, pour the marinade over, and use tongs to turn the chicken to coat evenly. Refrigerate for at least 30 minutes, preferably overnight, to allow the flavors to penetrate.
- Preheat the Air Fryer: Set the air fryer to 160°C (320°F) and preheat for about two minutes. Lightly mist the basket with vegetable oil to prevent sticking.
- First Cook: Arrange the chicken thighs skin-side down in a single layer in the air fryer basket, spacing them slightly apart for even crisping. Cook for 20 minutes at 160°C.
- Flip and Glaze: Using tongs, carefully flip the chicken so the skin side is up. Brush the chicken with the reserved marinade to enhance flavor.
- Final Cook: Raise the temperature to 180°C (350°F) and cook for an additional 10 minutes or until the skin is crisp and chicken reaches an internal temperature of 85°C (180°F) as measured by a meat thermometer. Let the chicken rest for five minutes after cooking.
