  • 1 package (5.3 ounces) Boursin Fine Herbs & Garlic cheese, softened

Instructions

  1. Prep Chicken: Pat the thinly sliced chicken cutlets dry with paper towels. Season both sides lightly with salt and pepper to enhance the flavor of the meat.
  2. Cook Chicken: Heat avocado oil in a large skillet over medium-high heat until shimmering. Add the chicken cutlets and cook for about 5 to 6 minutes on each side, or until the internal temperature reaches 160-165°F and the chicken is no longer pink in the center. If the oil splatters or the chicken cooks too quickly on the outside, reduce heat to medium and cover the skillet with a lid as needed. Once cooked, transfer chicken to a plate and set aside.
  3. Make Gravy: Pour the chicken broth into the same skillet and add the softened Boursin cheese, breaking it up into crumbles. Whisk the mixture thoroughly, scraping up any browned bits from the bottom to incorporate more flavor. Reduce heat to medium-low and let the sauce gently simmer for 3 to 5 minutes until smooth and slightly thickened. Stir in the minced fresh parsley to brighten the sauce.
  4. Finish & Serve: Lower heat to low and return the cooked chicken along with any accumulated juices back into the skillet. Spoon the Boursin sauce over the chicken, allowing it to warm through for 2 to 3 minutes. If the sauce thickens too much, whisk in additional chicken broth to reach desired consistency.
