Instructions
- Cook the chicken: Heat 1 tablespoon of neutral oil in a large nonstick skillet over medium-high heat. Add the ground chicken, seasoning with fine sea salt and freshly-ground black pepper. Cook the chicken, breaking it apart with a wooden spoon, until it is fully browned and crumbled. Remove from the skillet and set aside in a clean bowl.
- Sauté aromatics and cole slaw: In the same skillet, add the remaining 1 tablespoon of oil along with the white parts of the scallions, minced garlic, and grated ginger. Sauté while stirring constantly for about 1 minute until fragrant. Add the cole slaw mix and cook for another 2 minutes, stirring occasionally until the vegetables are slightly wilted.
- Cook the eggs: Push the cole slaw mixture to one side of the pan. Pour the whisked eggs into the empty side and cook, scrambling them by breaking them into small pieces as they set.
- Combine ingredients: Return the cooked ground chicken to the skillet with the cole slaw and eggs.
