Dressing

  • ⅓ cup soy yogurt (80 g)
  • ½ cup pineapple juice (118 ml)
  • ⅓ cup lime juice (75 ml)
  • 2 tbsp olive oil
  • 1 tsp thyme
  • ½ tsp cumin
  • ½ tsp paprika
  • ½ tsp salt
  • Dash cayenne


Instructions

  1. Combine Salad Ingredients: Add the chopped lettuce, black beans, pineapple with juice, finely chopped red onion, red bell pepper, and chopped avocado into a large salad bowl.
  2. Season Salad: Sprinkle a dash of salt and freshly ground pepper over the salad ingredients and gently toss to distribute the seasoning evenly, which enhances the flavors before adding the dressing.
