Cheese

  • 2 burratas (5 oz / 150 g each)

Pasta & Sauce

  • 180 g spaghetti
  • 450 g cherry tomatoes
  • 30 g olive oil
  • 20 g butter
  • 200 g pasta water (reserved from cooked pasta)
  • 2 medium garlic cloves (grated finely)
  • ¼ tsp chili flakes
  • ⅓ tsp salt
  • 10 basil leaves (chopped)


Instructions

  1. Prep the Ingredients and Boil Water for Pasta: Wash and dry the cherry tomatoes thoroughly to avoid splattering in the pan. Grate the garlic finely. Bring a pot of water to a boil and add a tablespoon of salt.
  2. Start the Sauce: Heat a wide pan over medium-high heat (around 7 on a 9-scale). Add olive oil and then the cherry tomatoes without crowding the pan. Allow the tomatoes to burst and caramelize without stirring too much initially.
  3. Cook the Pasta: When the tomatoes begin to sizzle, add the spaghetti to the boiling salted water. Cook the pasta for 2 minutes less than the package instructions to keep it slightly undercooked.
  4. Finish the Tomato Sauce: Stir the tomatoes occasionally for 3-4 minutes until skins burst. Add chili flakes, salt, and grated garlic, stirring well. Cook for another 2-3 minutes to infuse flavors.
  5. Separate and Release Tomato Juices: Remove half of the tomatoes whole and set aside. Gently press the remaining tomatoes in the pan to release their juices.
  6. Add Pasta Water and Basil: Pour in about half of the reserved pasta water and stir. Add chopped basil leaves and let the sauce simmer for 1-2 minutes.
  7. Combine Pasta and Sauce: Drain the pasta and add it directly to the pan with the sauce while still hot. Turn heat to low (around 3 on a 9-scale).
  8. Create Creamy Sauce: Add butter and gradually pour in remaining pasta water. Stir continuously until the sauce is creamy and glossy. Stir in the reserved whole tomatoes gently, then remove the pan from heat.
  9. Serve: Plate the pasta or serve directly from the pan topped with burrata. Cut open the burrata to let its creamy inside melt into the warm tomato sauce. Optionally, drizzle a little extra olive oil on top.

Notes

  • Do not rinse pasta after draining to retain starch for better sauce adhesion.
  • Use a wide pan for the tomato sauce to give the cherry tomatoes enough space to burst evenly.
  • The pasta is cooked slightly under al dente to finish cooking in the sauce and absorb flavors.
