Ingredients

Bean Mixture

  • 1 clove garlic
  • 1 14-ounce can chickpeas or white beans, rinsed and drained
  • A handful of fresh basil (divided)

  • Salt and pepper to taste
  • 1 heaping cup canned or jarred artichoke hearts, drained

To Serve

  • About 2 cups fresh baby spinach or other greens
  • 10 small pieces of whole wheat bread, toasted


Instructions

  1. Prepare the bean mixture: In a food processor, pulse the garlic, chickpeas (or white beans), and about half of the fresh basil until finely minced and crumbly. This creates a flavorful base for the toasts.
  2. Mix the ingredients: Cut the remaining basil into thin ribbons and chop the artichoke hearts. In a bowl, combine the chickpea mixture with lemon juice, sliced basil, olive oil, salt, pepper, and the chopped artichokes. Stir well and taste, adjusting seasoning as desired.
  3. Add greens and serve: Just before serving, toss in the fresh baby spinach or other greens to keep them vibrant and crisp. Spoon the mixture onto toasted whole wheat bread slices. These toasts are also excellent when paired with chips or wrapped in a tortilla for a portable snack.
