Ingredients
Pickling Liquid
- 3/4 cup water
- 1/2 cup vinegar (apple cider, white distilled, white wine, or rice vinegar)
- 1 1/2 teaspoons kosher salt
- 2 teaspoons cane sugar (optional)

- 1 medium red onion (can substitute white onion, yellow onion, or shallot)
Instructions
- Prepare Pickling Liquid: In a medium saucepan over medium-high heat, bring the water, vinegar, kosher salt, and cane sugar to a vigorous simmer, ensuring the salt and sugar dissolve completely.
- Slice Onions: While the liquid heats, peel, trim, and slice the onion very thinly to allow quick absorption of the pickling liquid.
- Jar the Onions: Place the thinly sliced onions into a wide-mouthed mason jar with a capacity of at least 1 pint (480ml) and up to 2 pints (950ml).
- Pour Hot Liquid: Carefully pour the hot pickling liquid over the sliced onions in the jar, ensuring all onions are fully submerged. Use a spoon to press them down if needed, as their volume will shrink during pickling.
- Cool and Store: Cover the jar with a lid and transfer it to the refrigerator. The pickled onions will be ready in as little as 15 minutes but taste best after marinating for 24-48 hours.
